Keep it Cool III: Thai Cashew Chopped Salad

Like the other salads in this series (Asian Broccoli Salad & Southwestern Chopped Salad), this one is packed with flavor and freshness. And, while there is already a bounty of veggies included, you can certainly take it up a notch by adding chopped raw broccoli or grated local zucchini.
